  • 2 tablespoons butter

  • 1 cup Heavy Cream
  • 1 tablespoon tarragon, chopped
  • 1 teaspoon table salt 
  • 1 sheet puff pastry
  • 1 egg whisked, for egg wash

Making Process

Step 1: Preheat the oven to 400 fahrenheit

Step 2: Lobster meat that needs to be removed from lobsters. Next make your puff pastry; If not already melted, let it melt.

Step 3: Dice shallots. Wash, peel, and cut into cubes portions of Yukon gold potatoes. Half one large celery stalk, and chop it into small sizes. Wash carrots, then peel the carrots into half-moons (while saving thin tips). Mince garlic and tarragon.

Step 4: Using a pot or dutch oven put 2 tbsp olive oil on the medium flame. Afterwards, saute shallots, carrots, and celery. Pour in potatoes and cook until the shallots get tender.

Step 5: Add garlic; Fry until golden brown. Pour in the sherry cooking wine; Stir to deglaze.

Step 6: Pour 3 tablespoons of butter into the vegetable mixture, then add the flour and stir for 1-2 minutes. Add broth to mixture and stir; Add the tarragon and then whisk the cream into the mixture. 

Step 7: Stir gently until the mixture has thickened; it should take approximately 8-10 minutes. Finally, add the lobster meat and then turn off the stove.

Step 8: In a bowl, beat 1 egg and add a little amount of water to it to make an egg wash. Place the filling also on a 9-12 inch oval baking dish and spread it evenly flat with less thickness.

Step 9: Place the puff pastry on top and seal the edges. You may need to do some additional trimming; Also, make a cross-shaped cut in the center of the meat mixture.

Step 10: After it is brushed with egg wash, bake for 25-30 minutes until golden and puffy. Take out of the oven, allow them to cool for a little while, then enjoy while they are still warm.

Refrigerator & Reheat: Store leftovers in the refrigerator for 2 days. Should be reheated in the oven for best results.

Freeze: Uncooked lobster pies can be frozen for up to three months if stored properly. For baked frosting, cook at 400° for about 40-45 minutes.
