Ingredients of Crawfish Pie 

For the Crust:

  • 2 ½ cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon kosher salt
  • 1 cup unsalted butter, cold and cut into 1/2-inch pieces
  • ½ cup plus 1 tablespoon cold buttermilk

For the Filling:

  • 1/2 cup unsalted butter
  • 1 large onion, chopped into medium pieces 
  • 1/2 cup diced green bell pepper
  • 2 stalks celery, finely diced
  • 2 cloves garlic, minced
  • 1 ⅓  cups whole milk
  • 2 lb package crawfish tails and crawfish fat  
  • ½ cup parsley, chopped
  • 1 ½ teaspoons Tony Cachere’s (or Old Bay) seasoning
  • 1 large egg and its separator for the egg wash

Equipment

Before you start cooking, ensure you have the following equipment:

  • Skillet
  • Mixing bowl
  • Whisk and spatula
  • Pie dish

Making Process

Step 1: Combine flour, sugar, and salt, then put in the grated butter. Rub it in the flour with your fingers. Pour cold buttermilk. Mix with a fork. Pour water if required. Toss dough onto a slab to work on it. Knead gently into a disk. Using a sharp knife, divide into two disks. Coat in plastic and then put in the refrigerator for approximately 1 hour. 

Step 2: The butter melts in a pan. Then add onion, pepper and celery. Fry for 5 to 10 minutes. Add the garlic and fry 2 to 3 minutes more. Our weeds in milk, crawfish tails and seasonings; Parsley, onions cook for 5 minutes. Adjust the seasoning. Cover and set aside.

Storage
